Nigella Lawson's Chocolate Olive Oil Cake is absolutely delicious.  It is very moist and tastes delicious with a dollop of cream.  And because there is no milk or flour, it is great for people who are lactose or gluten intolerant.

  • 150 millilitres regular olive oil (plus more for greasing)

  • 50 grams good-quality cocoa powder (sifted)

  • 125 millilitres boiling water

  • 2 teaspoons best vanilla extract

  • 150 grams ground almonds (or 125g plain flour / 3/4 cup plus 1 tablespoon all-purpose flour)

  • ½ teaspoon bicarbonate of soda

  • 1 pinch of salt

  • 200 grams caster sugar

  • 3 large eggs

Preheat your oven to 170°C/150°C Fan/gas mark 3/325ºF....

As many of my friends know, there aren’t many days that go by that I haven’t got a stock on the boil.  I was brought up in a home that would never be short of a good gelatinous stock in the fridge.  It didn’t always come without its mishaps.  My gran, who lived with us, often infused our home with the unforgettable smell of burnt chicken bones (to compliment the smell of boiled cabbage) as she’d often forget she’d left them on the stove.  But her aim was always to make the best of very little.
