APPLE CIDER VINEGAR inspired by Rob Greenfield

This is the best remedy to so many things from sorting out an upset stomach to reinvigorating your hair.  The best thing about it is that it is full of beneficial bacteria that help keep your gut healthy thus boosting your immune system.  It is incredibly simple to make and is a good way to use up apples if you have a glut or if they are past their best.  I often use the windfall apples and cut out areas that have been eaten by insects.

You’ll know that the fermentation has worked when you can see the ‘Mother’.  This is the cloud of bacterial foam which forms during the fermentation process and is full of the wonderful enzymes and minerals which are so beneficial for your health.

  • 3 apples

  • 1/4 cup of sugar

  • 1 litre of filtered water

Roughly chop the apples. Place the apples in a large open-top jar. Add a 1/4 cup of sugar.  Pour in the filtered water and stir to mix it all together.  Make sure the apples are covered with water.  Add a little more water if necessary.  Cover the top with a breathable cloth and secure with an elastic band to keep flies away while letting the liquid breathe.  Leave for one week in a dark place.  Remove the apples once the liquid has become darker and cloudy.  Cover again and leave for 1 to two months in a dark place.  Once ready, transfer it to a bottle with a lid.

* You can make your own stomach settler (a natural 'Alka Seltzer' if you like) by mixing a teaspoon of bicarb, with some ACV (about 2 fingers) topped with water.  Drink it when the bicarb is dissolved for fast relief from indigestion and stomach cramps.

* Make a hair rinse to invigorated tired lack lustre hair.  The vinegar restores the ph balance in the hair and clears the scalp of residue build up.  Mix  2 tablespoons of ACV with 250 ml of water in a bottle.  Pour into hair concentrating on the roots.  Massage in and leave for a few minutes before rinsing and then shampooing.
