This is my favourite Thermomix recipe so far.  It can obviously also all be done the conventional way by following the method but replacing the Thermomix with a stove top, a grater and a steamer where necessary.

I threw this one together quickly one day and it worked. I almost like it better than the traditional version.  It's definitely much less time-consuming and you can add more or less of the ingredients as you prefer.

This is such an easy cake to make and is absolutely delicious.  My favourite way to serve it is with a dollop of Greek yoghurt on the side.

CAKE

  • 2 Oranges

  • 5 Eggs

  • 250g golden caster sugar

  • 2 ripe avocados 

  • ½ Cup of hemp seeds (or roasted walnuts when you can have it)

 Another delicious meat-free feast from Leon,'Fast Vegetarian'.  It's quite an autumnal recipe but on these window, rainy days it feels quite apt.  I didn't have a squash so I used sweet potato and I substituted toasted pine nuts for the walnuts.
